As with all vegetarian- or vegan-friendly recipes, they are their own thing, so some folks will love ’em and others will still miss or prefer the “original” versions.
Here’s my quick recipe for a fully loaded (vegetarian version) potato:
Potatoes: I washed a couple of potatoes, poked holes in them with a fork, put them in a medium bowl half filled with water, and then used the “Baked Potato” function on my microwave.
Topping: In a fry pan, I sauteed a chopped onion in some olive oil and then added a can of drained (and rinsed) black beans along with a can of drained “Mexican style” tomatoes (diced tomatoes with peppers mixed in). Other veggies like corn can be a nice addition. As for seasoning, it’s your choice. I happened to go with Weber’s New Orleans blend.
Once everything was cooked, I added some plain yogurt on top and ended up with this:
